A.P. John ‘Oak Additive’ products have been developed in consultation with Australian and overseas winemakers to provide a selection of additives that are well suited to the requirements of the contemporary winemaker.
‘Oak Additives’ now play an important role within the winemakers oak requirement for wine. Oak Additives can assist with colour stabilisation in red wines during the primary ferment process and impart desirable oak and toast characters. Continuing on from our premium oak barrels we provide regional and oak grain selections within our oak additive plank range.
Premium French Oak sourced from the ‘Centre of France’ providing medium & fine grain plank options and American Oak ‘Regional Selections’ from the elevated, cool climate areas of the Appalachian Mountians and Central Missouri. Typically slow grown, oak is sourced through the same suppliers from which we source our cooperage (stave wood & heading) requirements.
Choices are available in convection oven – medium & medium plus toast or our ‘Traditionale’ fire toast methodology. The convection oven toasting provides sweet upfront oak flavours whilst the ‘Traditionale’ oak integration is soft and restrained.
All oak toasts are available in ‘Fan’ format for tank – please refer to our Fan specification sheet for details on ‘Fan’ format.
